I used the fruit pizza recipe to make this dessert. Made it simple and quite elegant. I whip cream as well, and top it when serving. I just used a shortcake crust instead of making the crust.
Crust
½ cup butter
¼ cup icing sugar
1 cup flour
Center
1 (8 oz.) pkg. cream cheese
1/3 cup white sugar
1 tsp vanilla
a variety of sliced, fresh or drained canned fruit
Glaze
¾ cup sugar
3 tbsp cornstarch
1 cup water
1½ tbsp lemon juice
Mix first three ingredients together thoroughly. Press into large pizza pan. Bake 350 degrees for 8 – 10 minutes then let cool.
Cream together cheese, sugar and vanilla. Spread over cooled crust. Spread a variety of sliced fruit on the mixture.
Mix glaze ingredients in a saucepan. Stir until the glaze thickens. Cool slightly. Pour glaze over entire pizza. Keep refrigerated. Best to serve within 4 – 6 hours as crust may become a little soggy.
