CRISPY CAJUN FISH

Combine 1/4 cup of Mayonnaise with the juice from half a lemon and a heavy sprinkling of Cajun Seasoning.  Coat firm pieces of whitefish, such as tilapia, catfish or cod in mayonnaise mixture, then in flour.  Fry in 1 inch of hot oil.
