CHUNKY CHEWY CHOCOLATE CHIP COOKIES

½ cup unsalted butter

1 pkg (350g) semi-sweet chocolate chunks
3 large eggs
1 cup brown sugar
1 tsp. vanilla
2 cups all purpose flour
½ cup cocoa
½ tsp. baking powder
½ tsp. salt
1 cup coarsely chopped walnuts
1 cup shredded coconut
1 cup raisins or dried cherries

Bake in center of a 350 degree oven. Let cookies cool on the baking sheet until they are easy to remove, then transfer to a wire rack and let cool completely.

In microwave melt butter with 1 cup of the chocolate chips. Set aside to cool to lukewarm.

In a large bowl, using and electric mixer, beat eggs, brown sugar and vanilla until light and fluffy. Beat in cooled butter/chocolate mixture.

In a medium bowl, sift together flour, cocoa, baking powder and salt. Gradually stir dry ingredients into batter in large bowl. Add walnuts, coconut, raisins and remaining chocolate chunks, stir to blend. The batter will be stiff.

Using a tablespoon and wet-finger tips drop 1 inch mounds of the batter onto a greased cookie sheet. Keep about 2 inches apart; cookies do not spread when baking.

Let cookies cool on baking sheet till they are easy to remove, and then move to wire rack to finish cooling.
