QUESO FUNDIDO

Saute 1 chopped onion in a small skillet. Add 1 crumbled chorizo and sauté till done. Drain off grease. Remove from heat. Add 1 jigger of tequila. Careful not to let it flame. After liquid evaporates, cover surface with 8 oz or ¼ kilo chopped manchego cheese. Cover skillet and let cheese melt over low heat. Serve wrapped in hot flour tortillas
