I usually mix together old cheddar, plus another type of grated cheese (tasty, not bland), with mayo, a bit of hot pepper, green peppers, green onion, tomatoes and very important, chopped black olives.  I usually do a cook of in the oven for a bit and then to the broiler or sometimes, just the oven, depending on the heat, etc.  You want them melted but crisp around the edges.
