3 ONION DIP

1 large leek white part only split lengthwise and sliced

1 each med yellow and red onion corsely chopped

3 - 8 oz creme cheese

1 1/4 cup grated parmesan cheese

2 large cloves garlic

3/4 cup mayo

1 1/2 tsp Kosher salt

1 tsp freshly ground black pepper

1/2 tsp red pepper flakes



Crudites potato chips or bread



Soak Leek for 5 min then drain

Preheat oven to 400. In a pot combine leek , onion and 1/2 cup of water. Bring to a boil reduce heat to low, cover and simmer until soft, about 15 min and drain.

In a large bowl combine creme cheese, 1 cup of parmesan, garlic and mayo,salt pepper and red pepper flakes. Add onion and leek to bowl and mix well.

Place mixture in an 8 in oven proof dish and top with remaining parmesan cheese. Bake 30 min or until bubbly and lightly brown. Serve immediately with crackers or something similar.
