ELSIE'S MINCEMEAT CUP COOKIES

¾ cup butter or margarine
¾ cup brown sugar
1 egg
½ tsp vanilla
1 ¾ cup flour
½ tsp soda
¼ tsp salt
½ tsp cream of tartar

mincemeat, jam or other filling

Preheat oven to 350 degrees and bake approximately 20 minutes

My husband’s mother made these for us one Christmas, they are a family favorite

Cream butter and sugar till fluffy, add egg and vanilla. Sift flour, salt, soda, and cream of tartar together. Add to creamed mixture. Mix well. Make dough into little balls, the size of walnuts. Press into muffin tins 1 ½ inches across coating sides and bottom. Drop 1 tsp filling in and flatten a small piece of dough and lay over the top to seal. Dust with icing sugar when done.
